Southern Corn Bread

1 cup corn meal - white or yellow
⅓ cup sugar
1 tsp salt
1 egg - beat a little
1 cup flour (plain)
4 tsp baking powder
¼ cup shortening (softened, or oil)
1 cup buttermilk, sweet milk could do
Prepare a rather large pan for corn bread by putting ¼ cup oil, maybe a little more, into the the pan. Sprinkle pan generously with dry corn meal, set on top of stove until the meal has browned in the oil. While hot, pour the above mixture in, of course after all the ingredients have been mixed together to make a thick batter. Put in over and bake at 400 degrees for 20-25 mins. Back in our days, the old iron skillet would have been used. They were the best for corn bread and fried potatoes.
